Veggie Cheddar Soup (vegan)
I found a few recipes that had the framework I was looking for on how to go about this but I decided to really make it my own. I added so many vegetables and can’t wait to try it with a bunch more! I don’t have measurements because a lot of the time I just wing it. If you like a more stewy soup I would use less water. I probably used about 4 cups water and an entire carton of the vegetable broth for the base because I wanted it to be thicker and really rely on the vegetables to make it hearty.
This was completely vegan and one of my favorite soups I know I’ll be coming back to again this winter. When I was having it as leftovers it paired perfectly with sprouted whole grain bread and some vegan cheese sprinkled on top and broiled for a faux open face grilled cheese!

Ingredients //
Sweet potato (peeled + diced + sauteed)
Celery
Onion
Carrot
Broccoli
A few of each but 1 onion should do. Chop + celery, onion, broccoli and carrot + saute with olive oil & garlic
For all love of “cheddar”
Cashews (soaked overnight)
Water
Oat milk (or any non dairy)
Dash of dijon mustard
Garlic powder
Nutritional yeast
Vegan cheese
Garlic (lots of garlic)
Vegetable broth
Beans
Salt + pep + spices of your choosing!
Sauté the potatoes separate from the other vegetables until soft and lightly charred. About 15 mins.
Sauté celery/onion/carrot/broccoli together.
Blend “cheddar ingredients” in high speed blender
Drop in water, vegetable broth, and “cheddar mix”
Turn crockpot onto low heat and set timer to 4 hours
Drop in the rest of the sautéed vegetables and add in beans of your choice! (rinsed)
Stir frequently, add whatever spices and other vegetables you like!
